This recipe is a simple way to make ‘Bae Kkakdugi’ (Pear Kimchi Radish) using any less-than-perfect pears you might have. Main Ingredients- 1 Pear (medium-sized)

Seasoning Ingredients- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Fish Sauce (anchovy or sand lance)
- 1 tsp Minced Garlic
- A small amount of chopped Scallion or Green Onion

Cooking Instructions
Step 1
First, wash the pear thoroughly and peel it. Then, cut it into bite-sized cubes, similar to kkakdugi (about 2-3 cm). Cutting them too small might reduce the pleasant crunch, so aim for a moderate size.

Add 2 tablespoons of gochugaru to the cut pear pieces and mix well to coat. This step helps the pear absorb the seasoning and gives it a beautiful color. It also ensures the seasoning adheres better.

Next, add 2 tablespoons of fish sauce. Fish sauce adds a savory depth (umami) and helps to season the dish. You can use either anchovy or sand lance fish sauce.
Step 4
Now, add 1 teaspoon of minced garlic and the chopped scallions you prepared. Finally, add 1 teaspoon of salt to adjust the taste. If you prefer it sweeter, you can add a tiny bit of sugar, but the pear’s natural sweetness might be sufficient, so taste and adjust as needed.

Gently mix all the seasoning ingredients with the pear until well combined. Be careful not to mix too vigorously, as this could mash the pear. Sprinkle with sesame seeds for a final touch.
