Ingredients- 2 large onions
- A small bunch of chives (optional, for freshness)
- A little seasoned seaweed (for garnish, optional)
- 1 tsp salt
- A pinch of coarsely ground black pepper
Cooking Instructions
Step 1
First, prepare two large, fresh onions. Peel and wash them thoroughly, then slice them as thinly as possible. Thin slicing is key to bringing out the onion’s sweetness and achieving a tender texture. (The onions in the photo look particularly large!)
Step 2
Heat a generous amount of cooking oil in a frying pan over medium-low heat. Add all the thinly sliced onions. The trick here is to stir continuously with a spatula to prevent burning, allowing the onions to cook slowly. Continue to sauté until they turn a nice, rich brown color. This slow cooking process will deepen their natural sweetness significantly.
Step 3
Once the onions are deeply colored and beautifully caramelized, add 1 teaspoon of salt to season. Grind some coarse black pepper over the onions for added flavor. If you like, finely chop some chives and stir them in for a fresh aroma and a hint of herbaceousness. Chives are optional but highly recommended for an extra layer of flavor and a pleasant crunch.
Step 4
Finally, drizzle a little sesame oil for a glossy finish and nutty aroma. Serve this mixture over rice. The onions release plenty of moisture as they cook, creating a wonderfully moist and flavorful rice bowl without needing any additional liquid. For an extra touch of visual appeal and taste, crumble some seasoned seaweed on top as a garnish.
