This recipe is perfect for a simple yet special meal or even for entertaining guests. I’m sharing all my little tips and tricks, so get ready to create some magic in your kitchen!
Curry Ingredients- 1 Onion (sweeter varieties yield a richer flavor)
- 1/4 Carrot (adds color and texture)
- 100ml Milk (for a creamier curry)
- 1 serving Rice (freshly cooked, warm rice is best!)

Cooking Instructions
Step 1
First, let’s prepare the ingredients for our curry. Finely chop or thinly slice the onion, and dice the carrot into small pieces. Heat a little oil in a pan and add the chopped onion and carrot. Sauté them over medium-low heat until they become soft and fragrant. Caramelizing the onions slowly will unlock their natural sweetness and deepen the curry’s flavor.
Step 2
Transfer the sautéed onions and carrots to a blender or food processor. Add 7 Tbsp of curry powder, 100ml of milk, and to your taste, 4 Tbsp of chili powder and 2 Tbsp of sugar. (For an even creamier and sweeter taste, you can add heavy cream or yogurt. If you enjoy Indian flavors, a touch of garam masala would be lovely!) Blend everything until smooth. Pour the blended mixture into a pot and simmer over medium-low heat for about 5 minutes, stirring occasionally. Your delicious onion curry is now ready!

Now, let’s make those crispy onion rings! Peel and slice the onion into rings. (Tip: If you find raw onions too pungent, soak the rings in cold water for about 5 minutes before proceeding.) Lightly season the onion rings with a sprinkle of curry powder and chili powder. Next, coat the rings evenly with tempura flour or breadcrumbs, ensuring a good layer for crispiness.
Step 4
In a small bowl, whisk together 1 egg and 1 Tbsp of milk to create an egg wash. Dip the flour-coated onion rings into the egg wash, making sure they are fully covered. Heat a generous amount of cooking oil in a pan over medium heat. Carefully place the egg-washed onion rings into the hot oil and fry until golden brown and crispy. Flipping them occasionally will ensure even cooking.
