In this recipe, we use a strawberry to sugar ratio of 1:0.7, but you can adjust it to 1:0.6 based on your preference. Using a generous amount of sugar or corn syrup helps prevent mold and extends the shelf life. Generally, strawberry syrup has a shelf life of 2-3 weeks after aging, but storing it in a kimchi refrigerator can extend its freshness even further. This homemade strawberry syrup is perfect for mixing into yogurt or drinks – it tastes amazing! Strawberry Syrup Ingredients- 1kg fresh strawberries
- 2 Tbsp vinegar (for washing strawberries)
- 700g granulated sugar (70% of strawberry weight)
- 2-3 swirls of corn syrup (adjust to taste)

Cooking Instructions
Step 1
First, prepare 1kg of fresh strawberries. Even if they are small, choose tasty ones. Fill a large bowl with enough water to cover the strawberries, add 2 tablespoons of vinegar, and let them soak for about 1 minute. This effectively removes impurities from the strawberries.
Step 2
Rinse the strawberries soaked in the vinegar water thoroughly under running clean water to remove any remaining vinegar and debris. Then, place them in a colander to drain the water completely. Ensuring the strawberries are well-drained is crucial to prevent spoilage and enjoy them deliciously.
Step 3
Carefully cut off the green tops of the strawberries, which can detract from their freshness. Be sure to only remove the tops without cutting too much into the fruit.
Step 4
Once prepared, gently mash the strawberries with your hands. You don’t need to mash them into a fine pulp; leaving some chunks allows for a pleasant texture when you eat the finished syrup, making it even more enjoyable.
Step 5
After mashing, the strawberries will have a texture with some noticeable pieces remaining. We’ll proceed to the next step with this consistency.
Step 6
Add 700g of granulated sugar to the mashed strawberries. (For 1kg of strawberries, 700g of sugar is approximately a 70% ratio). Stir with a clean, dry spoon until the sugar is evenly distributed. The sugar ratio can be adjusted to your personal taste; a 60% ratio is also acceptable. However, a sufficient amount of sugar helps prevent mold and allows for longer storage.
Step 7
Stir well until the sugar dissolves into the strawberry pulp. It’s important to mix until you no longer see sugar granules at the bottom and the mixture becomes somewhat translucent.
Step 8
Finally, add 2-3 swirls of corn syrup. Corn syrup adds gloss and a smooth sweetness, and also acts as a natural preservative, enhancing its shelf life. Once all ingredients are well combined, your homemade strawberry syrup is almost ready.
Step 9
Transfer the prepared strawberry syrup into an airtight container, cover it, and let it age in a kimchi refrigerator for at least 12 hours. This process allows the flavors and aromas of the strawberries to meld beautifully with the sugar, creating a rich depth of taste.
Step 10
After 12 hours, the strawberry syrup will be well-aged. For hygienic storage and longer preservation, transfer the finished syrup into sterilized glass jars. (The picture shows it stored in the bowl for now.)
Step 11
Let’s make a strawberry latte using the delicious strawberry syrup! Pour 150ml of plain yogurt (or milk) into a cup, and add about 5 tablespoons of the prepared strawberry syrup. Stir well, and then adjust the ratio of syrup to yogurt (or milk) to your liking. Enjoy your refreshing and sweet strawberry latte!
