Ingredients- 300g sweet potato
- 1 onion
- 1 bell pepper (or sweet pepper)
- 3 Tbsp canned corn (drained)
- 1-2 sausages (your preference)
- 1 Tbsp tomato sauce
- 50g pizza cheese (mozzarella)
- A little milk or water (for mashing)
Cooking Instructions
Step 1
First, peel the sweet potato and slice it into rounds about 1cm thick. Place a steamer basket over boiling water and steam the sweet potato slices for about 15-20 minutes, or until they are fork-tender. They should be soft and easily pierced with a fork.
Step 2
While the sweet potatoes are steaming, prepare the toppings. Finely chop the onion and bell pepper (or sweet pepper). Slice the sausages into rounds about 0.5cm thick, or into half-moons if you prefer.
Step 3
Once the sweet potatoes are cooked and slightly cooled, transfer them to a bowl. Mash them thoroughly with a fork or masher. If using a drier variety of sweet potato (like a ‘bam’ sweet potato), add 1-2 tablespoons of milk or water while mashing to achieve a smooth, spreadable consistency. Ensure there are no large lumps for the best texture.
Step 4
Line a plate with parchment paper. This step is crucial for preventing the pizza from sticking and for easy cleanup later.
Step 5
Pour the mashed sweet potato onto the parchment paper-lined plate. Use a spoon or spatula to spread it evenly into a circular pizza base shape, about 1cm thick. You can make the edges slightly thicker if desired.
Step 6
Spread 1 tablespoon of tomato sauce evenly over the sweet potato base. Be careful not to use too much, as it can make the pizza too wet or salty. Sprinkle the chopped onion, bell pepper, and drained canned corn (3 Tbsp) over the sauce.
Step 7
Finally, generously sprinkle 50g of pizza cheese over the toppings, ensuring it covers the surface evenly. Carefully lift the parchment paper with the pizza on it and place it into your air fryer basket. Make sure the plate itself is not inside the air fryer.
Step 8
Preheat your air fryer to 180°C (350°F) and cook for approximately 10 minutes. You’re looking for the cheese to be melted and bubbly, and the toppings to be heated through.
Step 9
After 10 minutes, your delicious sweet potato pizza should be ready! If the cheese isn’t fully melted or you prefer a crispier crust, you can air fry it for an additional 2-3 minutes at 180°C. Enjoy your warm, homemade pizza!
