- 1 Super Sweet Corn (kernels removed)
- 10g Unsalted Butter
- 1 cup Milk (200ml)
- 1/2 small Onion (approx. 50g)
Cooking Instructions
Step 1
First, rinse 1 cup of short-grain rice thoroughly and soak it in water for about 30 minutes. Soaking the rice ensures it cooks evenly and results in a wonderfully chewy texture.
Step 2
Carefully cut the kernels off the super sweet corn using a knife. Don’t discard the cob; set it aside. The cob releases a subtle sweetness and aroma that will infuse the rice beautifully.
Step 3
Place the soaked rice into your pot. Arrange the reserved corn cob in the center on top of the rice. Cover the pot and cook over medium heat for about 15 minutes. Pay attention to the heat once the water starts boiling.
Step 4
Once the water has reduced and the rice is partially cooked, evenly sprinkle the corn kernels over the rice. Replace the lid and continue to cook over very low heat for another 5 minutes. Make sure to spread the kernels evenly so they don’t clump together.
Step 5
When the rice is fully cooked and fluffy, carefully remove and discard the corn cob from the pot.
Step 6
Using a rice paddle or spatula, gently mix the rice and corn kernels together. You don’t need to add any seasoning; the natural sweetness of the super sweet corn is enough to make this pot rice incredibly delicious! Enjoy the delightful combination of sweet corn and fragrant rice.
Step 7
Now, let’s make the smooth and sweet super sweet corn soup. Here are the ingredients you’ll need:
Step 8
For the soup, also remove the kernels from another super sweet corn. Unlike the pot rice, the cob is not needed for the soup. Rinse the separated kernels and drain well.
Step 9
Peel the onion and slice it thinly into julienne strips. Slicing them as thinly as possible will help them cook down smoothly and contribute to a silky soup texture.
Step 10
Melt the 10g of unsalted butter in a pan over medium-low heat. It’s best to melt the butter slowly to prevent it from burning.
Step 11
Once the butter is melted, add the thinly sliced onions. Sauté them with the butter for about 3-4 minutes until they become translucent and release their sweet aroma. Sautéing the onions well enhances their natural sweetness.
Step 12
When the onions are translucent, add the separated corn kernels. Cook for another 2-3 minutes, stirring, until the corn and onions soften and meld together. This step helps the corn’s sweetness blend wonderfully with the butter and onion flavors.
Step 13
Pour in 1 cup (200ml) of milk. Bring the mixture to a gentle simmer, allowing it to thicken slightly as the ingredients cook down. Reduce the heat to low once it starts simmering.
Step 14
Add a tiny pinch of salt to season. Since the corn is naturally very sweet, using minimal salt is key to balancing the flavors.
Step 15
Add a sprinkle of black pepper for an extra layer of flavor. Continue to simmer gently until all the ingredients are tender.
Step 16
Turn off the heat. Use a blender or immersion blender to purée the mixture until very smooth. You can add a little more milk if you prefer a thinner consistency. Blending until perfectly smooth is crucial for a velvety soup texture.
Step 17
Pour the puréed corn soup back into the pot and simmer gently for a short while longer. This will further develop the rich flavors, completing your super sweet corn soup. Be careful not to overcook, as this can alter the texture.
Step 18
Serve the warm soup in bowls. For an elegant touch, garnish with a sprinkle of dried parsley or grated cheese. Enjoy this exceptionally sweet and smooth corn soup that bursts with the natural flavors of fresh corn!
