Ingredients- 200g fresh sweet corn kernels
- 100g canned tuna, drained
- 50g cabbage, finely chopped
- 10g onion, finely chopped
- 1 large egg
- 4-5 Tbsp starch (potato or corn starch)
- 2 pinches salt (adjust to taste)
- Pinch of black pepper (to taste)
Cooking Instructions
Step 1
First, steam the fresh sweet corn for about 10 minutes. Once steamed and slightly cooled, carefully scrape the kernels off the cob. This method helps to enhance the natural sweetness of the corn.
Step 2
Finely chop the onion and cabbage. It’s important to chop them very finely so they blend well into the fritter’s texture. Combine the finely chopped onion and cabbage with the prepared sweet corn kernels and the thoroughly drained tuna in a large bowl.
Step 3
Now, let’s make the batter. Crack one egg into the bowl with the corn mixture. Add 4-5 tablespoons of starch, 2 pinches of salt, and a pinch of black pepper. Mix everything together thoroughly with a spatula or spoon until well combined. The batter should be thick enough to hold its shape, not too runny. If it seems too stiff, add a little more egg; if too thin, add a bit more starch.
Step 4
Heat a pan over medium-low heat and add a generous amount of cooking oil. Spoon portions of the batter into the pan, shaping them into small patties. Cook for a few minutes until one side is golden brown and slightly crispy. Then, carefully flip them over and cook the other side until equally golden. Cooking over low heat ensures the fritters cook through evenly without burning. Enjoy your delicious sweet corn and tuna fritters – crispy on the outside and wonderfully moist inside!
