Sweet & Chewy Yeakbap (Korean Sweet Rice Cake) Made with Kawaji No. 1 Rice
Nutty Yeakbap Made with [Kawaji No. 1 Rice] – A Delicious and Healthy Treat
Whenever I get my hands on excellent quality rice, my first thought is to make Yeakbap. Today, just as my Kawaji No. 1 rice arrived, I immediately prepared the ingredients and made this delicious Yeakbap. It’s our household’s absolute favorite snack!
Ingredients- 4 cups Kawaji No. 1 rice
- 10 chestnuts, peeled
- 10 dates, pitted
- 1 cup brown sugar
- 4 Tbsp soy sauce
- 1/2 Tbsp cinnamon powder
- 2 Tbsp sesame oil
- 3 Tbsp raisins
- 3 Tbsp sunflower seeds, roasted
- 3 Tbsp almonds, sliced
Cooking Instructions
Step 1
First, wash 4 cups of Kawaji No. 1 rice thoroughly and let it soak for about 30 minutes. While the rice is soaking, place the pitted dates in a pot with some water and simmer gently to make a date tea. This date tea will add wonderful flavor and color to your Yeakbap.
Step 2
Slice the peeled chestnuts into bite-sized pieces. Now, place the soaked rice into the inner pot of your rice cooker. Then, add the prepared chestnuts, sliced almonds, raisins, and roasted sunflower seeds. Distribute them evenly over the rice.
Step 3
In the warm date tea, add 1 cup of brown sugar, 4 Tbsp of soy sauce, and 1/2 Tbsp of aromatic cinnamon powder. Stir well until the sugar is completely dissolved. This creates the delicious sauce for your Yeakbap, blending sweetness with a subtle aroma.
Step 4
Now, pour this flavorful Yeakbap sauce evenly over the ingredients in the rice cooker. You can gently mix everything together to ensure the soy sauce and brown sugar are well distributed among the rice and nuts.
Step 5
For cooking, you can use the standard ‘cook’ or ‘white rice’ setting on your rice cooker, just as you would for regular rice. No special adjustments are needed for this delicious Yeakbap.
Step 6
Adjust the water level as you normally would when cooking rice. The amount of water might vary slightly depending on the type of rice and how long it was soaked, so refer to your usual rice-cooking water ratio.
Step 7
Once the cooking cycle is complete, a delightful aroma of Yeakbap will fill your kitchen. Open the rice cooker lid after about 20 minutes to reveal your warm and appetizing Yeakbap.
Step 8
Using a rice paddle, gently fluff the Yeakbap without mashing it. Allowing some steam to escape while separating the grains will give it a lovely texture. You can press it lightly with a spoon or paddle into individual portions or use a mold to create pretty shapes.
Step 9
This homemade Yeakbap is perfectly balanced in sweetness, not overly sweet like some store-bought versions, and the combination of ingredients suits our family’s taste exactly. The satisfaction of making it yourself and enjoying the wonderful taste is truly rewarding.
Step 10
Portioning it into individual servings and wrapping them makes for convenient snacking. It’s perfect for a quick snack or even a hearty breakfast. Why not try making this nutritious and delicious Yeakbap easily at home?
Step 11
Your healthy Yeakbap is complete, featuring a delightful mix of various nuts, chewy chestnuts, sweet dates, and raisins, offering a wonderful taste and texture. Enjoy a wholesome snack with this beautiful and delicious homemade Yeakbap.
Step 12
Once the Yeakbap has cooled completely, refrigerating it will enhance its chewy texture and deepen its flavors. It’s delicious served cold, or you can gently warm it in the microwave.
Step 13
For Yeakbap to be eaten soon, serve it in a pretty small dish. For Yeakbap to be stored for longer and eaten cold, place it in an airtight rectangular container and store it in the refrigerator. This ensures it stays hygienic for longer. You won’t have to worry about snacks for a while!
