Today’s perfect banchan! Introducing quail egg jorim, a beloved Korean side dish that the whole family, especially children, will love. The chewy quail eggs are perfectly infused with a sweet and savory glaze, making them ideal as a side for rice or as a snack for kids! Make it easily and deliciously.
Main Ingredients- 4 trays of quail eggs (approx. 80 eggs)
- 1 shiitake mushroom (or your favorite mushroom)
Braising Sauce- 1/2 cup soy sauce (100ml)
- 1/3 cup sugar (70g)
- 1/3 cup corn syrup or rice syrup (70g)
- 1/2 cup soy sauce (100ml)

- 1/3 cup corn syrup or rice syrup (70g)
Cooking Instructions
Step 1
Prepare 4 trays of quail eggs (about 80 eggs) and place them in a pot. Add enough cold water to cover the eggs. Cover with a lid, bring to a boil over high heat, and simmer for 5 minutes. This step makes peeling the shells much easier.
Step 2
Immediately transfer the boiled quail eggs to cold water to cool them down quickly. Once completely cooled, begin peeling the shells. Gently tap the eggs to crack the shells and peel them off. This method helps to get smooth, unblemished quail eggs. Drain the peeled quail eggs in a colander.
Step 3
Place the peeled quail eggs in a pot and add water until the eggs are about half-submerged. Add the 1/2 cup soy sauce, 1/3 cup sugar, and 1/3 cup corn syrup. Bring to a boil over high heat, then reduce the heat to medium-low. Let it simmer, stirring or gently shaking the pot occasionally, for about 15-20 minutes, or until the sauce has reduced by about half and is nicely coating the eggs.
Step 4
When the braising liquid has reduced to about half its original volume, add the thinly sliced mushrooms. Continue to simmer for another 5 minutes to allow the mushroom flavor to meld. Finally, turn off the heat and drizzle in a swirl of sesame oil for an extra nutty aroma and flavor. Let it cool slightly before storing in a container for a delicious quail egg jorim banchan!
