Ingredients

  • 1/8 head of cabbage (approx. 150g)
  • 1/4 onion (approx. 50g)
  • 200g thinly sliced beef (shabu-shabu cut)
  • 1 Tbsp minced garlic
  • 1 Tbsp miso paste (mild, for soup)
  • 2 Tbsp anchovy sauce (or soy sauce)
  • 1 Tbsp chopped green onion
  • 500ml rice water (water used to rinse rice)

When seasoning, if you prefer a cleaner taste or if your homemade miso paste is very salty, you can adjust the seasoning with salt instead of anchovy sauce. Since this is soup for children, it’s important to season it not too salty.

Remove the core from the cabbage and dice it into about 2cm pieces. Peel the onion and dice it into similar-sized cubes. The key is to cut them into pieces that are easy for children to chew and eat.
