The natural sweetness of the apples enhances the curry’s flavor, creating a delicious curry rice that everyone, from children to adults, will love.   • 3 cups Water (approx. 600ml)

Step 1

Wash and prepare all ingredients for a delicious apple curry rice. Peel the onion, carrot, and potatoes. Wash the apple thoroughly, remove the core, and prepare to use it with the skin on.

Dice the prepared carrot into bite-sized cubes, perfect for children to eat. This size ensures a pleasant texture and attractive appearance when cooked.

Separate the broccoli into florets and peel the tough outer layer of the thick stems before slicing them thinly. You can substitute with other favorite vegetables if broccoli is unavailable. I used it because I had it on hand.

Chop the onion coarsely or dice it into large pieces. Sautéing onions will deepen their sweetness, enhancing the curry’s overall flavor profile.

Cut the potatoes into cubes of similar size to the carrots, making them easy to eat in one bite. Adding potatoes will make the curry rice more substantial.

Core the apple and slice it with the skin on. Using the skin adds nutrients and contributes a soft texture and subtle sweetness when cooked with the curry.

Heat 1 Tbsp of cooking oil in a wide pot. Add the diced carrots, potatoes, and broccoli stems, and sauté over high heat for 2-3 minutes. Sautéing the vegetables first significantly improves their flavor.

Once the vegetables are sufficiently sautéed, add the coarsely chopped onion and continue to cook together. Stir-fry until the onions become translucent to release their sweetness.

After thoroughly sautéing the ingredients, pour in 3 cups (approximately 600ml) of water and bring to a rolling boil over high heat. Once boiling, reduce the heat to medium and simmer until the vegetables are tender.

When the vegetables are almost cooked, add the sliced apple to the pot. It’s best to add the apple towards the end to prevent it from becoming too mushy during prolonged cooking.

After adding the apple, bring the mixture back to a boil over high heat and cook for another 2-3 minutes until the apple pieces are tender. You’ll notice a sweet aroma as the apples soften slightly.

Now it’s time to give it that curry flavor! Add the 6 Tbsp of store-bought curry powder to the pot and dissolve it well. The amount of curry powder can be adjusted to your preference, as different brands may vary in saltiness and thickness.
