Making Versatile Plum Syrup

  • 1kg Ripe Plums
  • 1kg Granulated Sugar or Brown Sugar (Plum to Sugar Ratio: 1:1)
  • 20ml Lemon Juice (approx. 1.5 Tbsp)
  • 50g Baking Soda (for washing plums)

Making Refreshing Plum Ade

  • Generous amount of homemade plum syrup
  • 2 paper cups of ice cubes
  • 2 paper cups of cold sparkling water

Cooking Instructions

First, thoroughly sterilize the glass jar for the plum syrup. Fill a pot with plenty of water, place the glass jar upside down in the pot, ensuring the opening is submerged, and boil for about 10 minutes. (Be careful not to use too high heat.)

Using tongs, carefully remove the sterilized glass jar and place it upside down to allow it to dry completely. It’s crucial to ensure the jar is completely dry, as a wet jar can cause the plum syrup to spoil.

Thoroughly washing the plums is very important. Sprinkle 50g of baking soda evenly over the plums. Gently rub them with your hands to remove any dirt or pesticide residue from the surface. Rubbing until you hear a ‘popping’ sound from the baking soda is ideal.

After rubbing with baking soda, rinse the plums several times under running water. Finally, submerge the plums in water for about 5 minutes to remove any remaining residue.

Pat the thoroughly washed plums dry with paper towels. Also, carefully trim off the hard stems from the plums with a knife. Leaving stems can make them inconvenient to eat later.

Once dried and stemmed, cut the plums into four pieces around the pit. Then, thinly slice each piece and cut them into small cubes. This method helps them mix well with sugar and release their juice more easily.

In the sterilized and dried glass jar, combine the prepared plum pieces, sugar, and lemon juice. Mix them thoroughly until evenly combined. Using a 1:1 ratio of plums to sugar will result in delicious plum syrup. Stir until the sugar has dissolved.

Do not refrigerate the mixed plum syrup immediately. Let it sit at room temperature for half a day (about 6-8 hours) to allow the sugar to dissolve and the plum juices to release sufficiently. Afterward, cover the jar and refrigerate for another 1-2 days for a deeper flavor.
