  • Gochugaru (Korean chili flakes) 2 Tbsp
  • Plum Extract (Maesilcheong) 2 Tbsp
  • Vinegar 2 Tbsp
  • Fish Sauce (anchovy or sand lance) 2 Tbsp
  • Toasted Sesame Seeds 1 Tbsp
  • Sesame Oil 1 Tbsp
  • Minced Garlic 1/2 Tbsp
  • Scallion (green parts only) 1/2 stalk

Cooking Instructions

Step 1

First, wash the radish thoroughly and peel it. Slice it thinly, then julienne it finely with a knife to about 0.3cm thickness. Consistent julienne thickness ensures even seasoning and a pleasant texture. Gently pat the shredded radish dry with paper towels to enhance its crispness.

To gauge the amount of shredded radish, grasp it with one hand to make two handfuls. (This is roughly 300-350g by volume.)

Place the shredded radish in a bowl. Add 2 Tbsp of gochugaru and mix well to coat. Adding the chili flakes first helps the radish absorb the color evenly, making it more visually appealing. Mix gently with your hands.

Next, add 2 Tbsp of plum extract for sweetness and mix again thoroughly. Plum extract provides a subtle and deep sweetness, different from sugar. Ensure the seasoning is well combined with the radish.

Add 2 Tbsp of vinegar for a tangy flavor and 2 Tbsp of fish sauce for umami. You can use anchovy or sand lance fish sauce, according to your preference. (I personally used a flavorful crab-flavored fish sauce.) Mix well to combine the ingredients.

Finally, add 1 Tbsp of toasted sesame seeds and 1 Tbsp of sesame oil for a nutty aroma. Stir in 1/2 Tbsp of minced garlic. Finely chop the green parts of half a scallion and add them for a fragrant touch. Mix everything one last time to combine, and your delicious radish salad is ready! You can enjoy it immediately, or chill it in the refrigerator for an even more refreshing taste.
