Cooking Instructions
Step 1
Begin by preparing your fresh Zespri Green Kiwis.
Step 2
Slice the pork tenderloin into approximately 0.5cm thick pieces. Make shallow scores on the surface of the meat with a knife; this helps the marinade penetrate better and results in a more tender texture. Lightly sprinkle the scored tenderloin with cooking sake to eliminate any gamey odors, then season evenly with fine salt and black pepper.
Step 3
Evenly coat the marinated pork slices with potato starch. Let them rest for about 10-20 minutes. The starch coating will help seal in the juices during cooking and contribute to a tender texture.
Step 4
Peel the green kiwis, cut them in half, and then into quarters to create bite-sized pieces. Set aside 7 pieces for rolling inside the pork, and another 7 pieces for garnishing the finished dish. Collect the remaining kiwi for making the sauce.
Step 5
Wash the red and yellow bell peppers, remove the seeds, and dice them finely. These colorful peppers will add visual appeal to your dish.
Step 6
Place the reserved kiwi pieces into a blender or use a grater to puree them into a smooth pulp. In a bowl, combine the pureed kiwi with 1 Tbsp soy sauce, 1 Tbsp vinegar, 1 tsp traditional soy sauce, and 3 Tbsp honey. Stir well until all ingredients are thoroughly mixed to create your refreshing green kiwi sauce.
Step 7
Place a piece of green kiwi onto each starch-coated pork tenderloin slice. Fold in the sides of the pork to enclose the kiwi, then press gently and roll the pork tightly to form a neat roll. Ensure the kiwi is securely enclosed so it doesn’t fall out during cooking.
Step 8
Heat 2 Tbsp of cooking oil in a pan over medium heat. Carefully place the pork rolls seam-side down in the hot pan. This placement helps the rolls stay sealed as they cook.
Step 9
Reduce the heat to medium-low and turn the rolls occasionally, ensuring they are browned evenly on all sides. A nice golden-brown sear adds wonderful flavor and texture.
Step 10
Pour the prepared green kiwi sauce into the same pan where the pork was seared. Add the diced red and yellow bell peppers. Bring the sauce to a simmer over medium heat.
Step 11
Once the sauce is bubbling, carefully add the browned pork tenderloin rolls back into the pan. Reduce the heat to low and spoon the sauce over the rolls continuously as they simmer. Let them braise and glaze for about 5-7 minutes, or until the sauce has thickened and coats the rolls beautifully.
Step 12
Arrange the finished pork tenderloin kiwi rolls attractively on a serving plate, perhaps in a circular pattern. Spoon the remaining delicious kiwi glaze generously over the rolls. Tuck the reserved fresh kiwi slices between the rolls for a final touch of color and freshness. Your delicious and visually appealing dish is now ready to be served!
