These sweet, tangy, and savory pickled onions are incredibly easy to make and are a fantastic addition to any meal. Once you make them, you won’t need any other side dishes! They are especially delicious when served with rich meats, fried chicken, or fatty dishes, cutting through the richness with their bright flavor. Highly recommended!
Main Ingredients- 3 onions (choose large, firm ones)
- 2 Korean chili peppers or red chili peppers (adjust to your preference)

Cooking Instructions
Step 1
First, prepare your glass jar for pickling. Wash the jar thoroughly, then sterilize it by pouring boiling water over it. Rinse with hot water and let it dry completely. This ensures better hygiene and longer storage. *I used a 2.4kg honey jar, but choose a size appropriate for your ingredients.
Step 2
Wash the onions and chili peppers under running water. Remove the stems from the chili peppers and pat them dry.
Step 3
Peel the onions and cut them in half. Then, slice them into your desired size. Usually, cutting them into 6 to 8 wedges is a good bite-size. Avoid slicing them too thinly, as they can become mushy. A moderate size is best.
Step 4
Arrange the prepared onions and chili peppers neatly into the sterilized glass jar. Be careful not to overpack the jar; leave some space.
Step 5
In a saucepan, combine the brine ingredients: water, soy sauce, vinegar, and sugar. Bring the mixture to a boil, stirring until the sugar is completely dissolved.

Carefully pour the hot, boiling brine over the onions and chili peppers in the jar. Ensure the liquid fully covers the vegetables.

Allow the jar to cool completely at room temperature. Once cooled, seal the lid tightly and refrigerate. For the best flavor, let it sit in the refrigerator for at least one day before enjoying.
