Nectarines are my absolute favorite fruit during the summer. I can never resist buying them whenever I see them at the market or grocery store. I often find myself just reaching for one, washing it, and enjoying its juicy sweetness right away. I’ve been enjoying nectarines as a daily snack lately. It reminded me of how I used to make peach compote for my children when they were young, chilling it in the refrigerator and serving it to guests. Inspired, I decided to make this compote with nectarines. It’s a delightful way to enjoy this seasonal fruit!
Ingredients- 5 ripe nectarines
- Granulated sugar (adjust to taste)
- 1 tablespoon lemon juice (optional)
Cooking Instructions
Step 1
First, gently peel the thoroughly washed nectarines. Their skin is quite thin, so they should peel easily.
Step 2
Once peeled, cut the nectarines in half and remove the pits. Then, slice them into bite-sized pieces (about 1.5-2 cm thick), working your way around the fruit. Be careful not to break the flesh as you slice.
Step 3
Place the sliced nectarines into a pot and add enough cold water to cover them. Add granulated sugar, adjusting the sweetness to your preference. Stir well until the sugar dissolves, then bring to a boil over medium-high heat. Once it comes to a rolling boil, reduce the heat to medium-low and simmer for about 5-7 minutes, allowing the nectarines to soften slightly. If desired, add 1 tablespoon of lemon juice at this stage for a brighter, tangier flavor and to enhance the vibrant color. The lemon juice is optional.
Step 4
Prepare your glass jars for the compote by sterilizing them in boiling water. Submerge the jars in a pot of water and bring to a boil, then carefully remove them. Ensure they are completely dry before filling. Sterilizing the jars helps to preserve the compote for longer.
Step 5
Carefully place the cooked nectarine slices into the sterilized and dried jars. Pour the simmering syrup over the fruit. You can also serve the compote in a separate glass bowl or arrange the sliced nectarines attractively on a plate.
