Introducing a special geotjeori (fresh kimchi salad) recipe perfect even when your appetite is low, like during pregnancy. It’s also a great way to encourage children who are picky eaters to enjoy fruits! The combination of folate-rich kiwi and iron-packed chives is nutritionally superb, and its sweet and tangy flavor profile stimulates the palate. It’s simple to make, serving well as a side dish or a refreshing salad.
Main Ingredients- 2 ripe kiwis
- 20g fresh chives
- 1/4 onion
Seasoning- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oligodang (corn syrup) or honey
- 1 Tbsp maesil cheong (green plum extract)
- 2 Tbsp anchovy sauce (fish sauce)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oligodang (corn syrup) or honey
- 1 Tbsp maesil cheong (green plum extract)
- 2 Tbsp anchovy sauce (fish sauce)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, let’s prepare the seasoning. In a small bowl, combine all seasoning ingredients except for the sesame oil: gochugaru, oligodang, maesil cheong, anchovy sauce, minced garlic, and toasted sesame seeds. Mix them well. Adding the sesame oil at the very end ensures the dressing coats the ingredients beautifully and flavors them effectively.
Step 2
Now, let’s prepare the main ingredients. Cut the chives into approximately 4cm lengths and wash them thoroughly under running water. Pat them dry with a paper towel to remove excess moisture. Thinly slice the onion and soak it in cold water for about 5 minutes to reduce its pungency and enhance its crispness, then drain well. Peel the kiwis and slice them into bite-sized pieces.
Step 3
Place the prepared kiwi, chives, and onion in a mixing bowl. Add the prepared seasoning mixture. Gently toss everything together to ensure the dressing is evenly distributed. Be careful not to overmix, as this can bruise the delicate chives.
Step 4
