Main Ingredients- 18 fresh shrimp
- 2 Tbsp red chili pepper, finely chopped
- 4 Tbsp onion, finely chopped
- 2 Tbsp green chili pepper, finely chopped
- 2 Tbsp corn kernels
- 1 Tbsp peas
- 5 Tbsp frying powder (for shrimp coating)
- 1 cup frying powder (for batter)
- 2 Tbsp cornstarch (for batter)
- 2/3 cup water (for batter)
- Pinch of salt
- Pinch of black pepper
- Vegetable oil, for deep-frying
Sauce Ingredients- 6 Tbsp ketchup
- 3 Tbsp chili sauce
- 2 Tbsp soy sauce
- 1/2 Tbsp doubanjiang (spicy bean paste)
- A little minced ginger
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Remove the black vein or ‘water sac’ from the tail end of the peeled and deveined shrimp. This step ensures a cleaner flavor and appearance.
Step 2
Season the prepared shrimp lightly with a pinch of salt and black pepper. This initial seasoning enhances the shrimp’s natural sweetness and flavor.
Step 3
Add 5 tablespoons of frying powder to the seasoned shrimp and toss to coat evenly. This dry coating helps the batter adhere better and ensures a crispier texture after frying.
Step 4
In a bowl, combine 1 cup of frying powder, 2 tablespoons of cornstarch, and 2/3 cup of water. Whisk until you have a smooth batter without lumps. The cornstarch will contribute to an extra crispy finish.
Step 5
Dip the lightly dusted shrimp into the prepared batter, ensuring they are fully coated. Heat a generous amount of vegetable oil in a pan to about 170-180°C (340-355°F). Carefully add the battered shrimp to the hot oil and fry until golden brown and crispy on both sides. Remove the fried shrimp and drain them on paper towels to absorb excess oil.
Step 6
In a separate pan, combine all the sauce ingredients: 6 tablespoons of ketchup, 3 tablespoons of chili sauce, 2 tablespoons of soy sauce, 1/2 tablespoon of doubanjiang, a little minced ginger, and 1 tablespoon of minced garlic. Stir well and cook over low heat until the sauce is well combined and slightly thickened. Be careful not to burn the sauce.
Step 7
Once the sauce begins to simmer, add the chopped onion, chopped green chilies, chopped red chilies, corn kernels, and peas. Sauté these vegetables with the sauce until they are tender-crisp and the flavors meld together.
Step 8
Finally, add the crispy fried shrimp to the sauce and toss gently to coat each piece. Avoid overcooking to maintain the shrimp’s crispiness. Serve immediately once coated for the perfect Gansho Shrimp!
