Easy Homemade Sweet and Sour Radish Wraps!
Using leftover kimchi radish, I made these sweet and sour radish wraps that are an essential side dish for meat lovers.
Main Ingredients- White or purple radish (appropriate amount)
- Salt (a pinch)
Sweet and Sour Brine- Water (1 ratio)
- Sugar (0.8 ratio)
- Vinegar (0.8 ratio)

Cooking Instructions
Step 1
These are white radishes and pretty purple radishes I grew in my garden for kimchi. The kimchi radishes are naturally sweet.
Step 2
Trim off the leafy tops to dry for ‘siraegi’ (dried radish greens), and then prepare just the root part.
Step 3
Wash the prepared radish thoroughly under running water. Then, use a vegetable peeler to carefully remove the skin, preparing it for the radish wraps.
Step 4
Now, set your slicing blade to approximately 0.1mm for an ultra-thin cut. Place the white radish onto the slicer and gently push it through. The key is to get paper-thin slices.
Step 5
Do the same for the beautifully colored purple radish, slicing it to a thin 0.1mm. The vibrant colors of the thinly sliced radish are visually appealing.
Step 6
Aren’t these thinly sliced radishes gorgeous? While slicers make it convenient, always be careful to avoid cutting your fingers.
Step 7
Once all the radish is sliced, let’s make the sweet and sour brine. In water that has been boiled and cooled, add sugar, vinegar, and a pinch of salt. Stir well to create a perfectly balanced sweet and sour mixture. The ratio is 1 part water, 0.8 parts sugar, and 0.8 parts vinegar.

In a clean container, ensuring it’s completely dry, carefully layer the thinly sliced radishes one by one.
Step 9
Pour the prepared sweet and sour brine over the radishes, making sure they are fully submerged. Let this mixture sit and pickle for about two days to achieve the perfect radish wraps! After two days, open the lid to reveal radish wraps that have absorbed the delicious tangy flavor and transformed into a lovely hue. They’ll bring a smile to your face, making you forget the cold weather.

No matter which type of radish you use, you’ll always get a delicious sweet and sour radish wrap.

I always like to make a large batch when the kimchi radish is in season, as it’s at its sweetest and crunchiest, and store it in the refrigerator.
