While many people make traditional pickled onions (jangajji), today we’re making a simple yet incredibly delicious onion condiment that pairs wonderfully with grilled meats. It’s quick to prepare and adds a fantastic touch to your meal.

Main Ingredients

  • 2-3 medium-sized fresh onions
  • 1/2 stalk of green onion (or scallions)

Seasoning Ingredients

  • 50ml Soy Sauce (approx. 4 Tbsp)
  • 100ml Water (approx. 1/2 cup)
  • 2 Tbsp Mirin (or cooking wine)
  • 2 Tbsp Oligodang (corn syrup)
  • 1 Tbsp Sugar
  • 1/2 Tbsp Oyster Sauce
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • A pinch of Sesame Seeds (for garnish)

Cooking Instructions

Step 1

First, wash the green onions (or scallions) thoroughly and finely chop them into about 0.5cm pieces. Using scallions will add a pleasant aroma and a beautiful color to the dish.

Peel and wash the onions. Cut each onion in half vertically. Then, to prevent them from falling apart during cooking, cut each half into three wedges, about 0.5cm thick.

Heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add the cut onions and sauté them slowly until they become translucent and the edges turn a light golden brown. This step deepens the natural sweetness of the onions and enhances their flavor.

In a bowl, combine 50ml of soy sauce, 100ml of water, 2 Tbsp of mirin, 2 Tbsp of oligodang, 1 Tbsp of sugar, 1/2 Tbsp of oyster sauce, 1/2 Tbsp of minced garlic, and 1 Tbsp of sesame oil. Whisk everything together until well combined and the sugar has dissolved. This creates your savory dressing.

Place the pan-fried onions into a clean airtight container. Pour the prepared sauce over the hot onions. Sprinkle the chopped green onions (or scallions) and sesame seeds over the top for garnish. Cover the container and let it chill in the refrigerator for 1-2 hours to allow the flavors to meld. This pickled onion condiment is perfect for cutting through the richness of meats and adding a burst of flavor to your meal!
