Sweet and Savory Braised Quail Eggs

A perfect side dish that becomes a rice-stealing star when you have a low appetite! We’re revealing the secret to simple yet deeply flavorful braised quail eggs. They are perfect as a side for children or as a snack for adults.
Main Ingredients- 1 pack peeled quail eggs
- 2 whole garlic cloves
Cooking Instructions
Step 1
Using pre-peeled quail eggs saves you the hassle of boiling and peeling them yourself, making it much more convenient. While they might be slightly more expensive, consider it a worthwhile trade for the time saved. Prepare one pack of peeled quail eggs (approximately 30 eggs).
Step 2
Pour 2 cups of water into a pot. Add the 2 whole garlic cloves and 1 Tbsp of sugar. The garlic will infuse the eggs with aroma, and the sugar will add depth to the flavor profile along with the soy sauce.
Step 3
Gently rinse the prepared peeled quail eggs under running water and drain them. This removes any impurities and gets them ready for braising.
Step 4
Once the water starts to boil, add the kelp to infuse the liquid with its flavor. Let it simmer for about 5 minutes, then remove most of the kelp, but reserve a small piece (about 2x3cm) and thinly slice it into strips. These kelp strips will be used as a garnish for the finished dish, making it more visually appealing.
Step 5
Now, add the rinsed quail eggs to the pot and pour in 5 Tbsp of soy sauce to begin the braising process. The liquid might seem plentiful at first, but it will reduce quickly over medium-high heat.
Step 6
Here’s a look at how the quail eggs change color over time during braising. Braise over medium-high heat for about 10 minutes, then 20 minutes, and 25 minutes, and you’ll notice the color deepening progressively. For the first 20 minutes or so, maintain medium-high heat, then reduce the heat to medium-low for the final 5 minutes. This slow braising allows the sauce to penetrate the eggs fully without burning.
Step 7
You can also check the doneness of the whole garlic cloves during the braising process. These are the garlic cloves after 10, 20, and 25 minutes of braising. We added 2 whole garlic cloves, and by the 25-minute mark, one of them became tender and slightly mashed. Feel free to add more garlic if you enjoy it.
Step 8
Finally, add 2 Tbsp of corn syrup (or oligosaccharide) to give the quail eggs a glossy sheen, and continue to braise for another 1-2 minutes. The corn syrup adds a beautiful shine, making the braised quail eggs look even more appetizing. Once done, garnish with the reserved kelp strips. Your delicious braised quail eggs are ready!
