Main Ingredients

  • 1 pack (approx. 350g) Chicken Drumettes
  • 12 whole garlic cloves
  • 3 Korean green chili peppers (Cheongyang peppers)
  • 1 tsp Sesame oil
  • 1 tsp Toasted sesame seeds

Seasoning Ingredients

  • 2 Tbsp Soy sauce (regular)
  • 1 Tbsp Mirin (or cooking sake)
  • 1 Tbsp Oyster sauce
  • 1 Tbsp Minced garlic
  • 1 Tbsp Plum extract (or corn syrup)
  • 1 Tbsp Oligosaccharide (or corn syrup)
  • 1/2 tsp Black pepper
  • 1/2 tsp Ginger syrup (or grated ginger)

Cooking Instructions

Step 1

First, trim any excess fat from the chicken drumettes with scissors. Rinse them thoroughly under cold water. In a pot, combine the drumettes, 1 cup (200ml) of water, 1 Tbsp of mirin, and 6 of the whole garlic cloves (halved). Bring this mixture to a boil. This initial boil helps to remove any blood or impurities from the bones, resulting in a cleaner flavor. The water might look a bit cloudy after boiling.

Discard the cloudy boiling water and rinse the chicken drumettes again under running water until they are clean. Gently wash the garlic cloves that were boiled with the chicken as well; these will be added back into the braising sauce for extra flavor.

Slice the Korean green chili peppers into thick rounds, about 1cm (0.4 inches) thick. Adding these chilies will provide a pleasant spiciness that cuts through any richness and enhances the overall flavor profile.

Now, let’s prepare the delicious braising sauce. In a small bowl, whisk together 2 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp oyster sauce, 1 Tbsp minced garlic, 1 Tbsp plum extract, 1 Tbsp oligosaccharide, 1/2 tsp black pepper, and 1/2 tsp ginger syrup. Ensure all the ingredients are well combined.

In a pan or pot, add the cleaned chicken drumettes, the remaining 6 whole garlic cloves, and 1 cup of water. Bring this to a boil over medium-high heat. As it boils, skim off any foam or impurities that rise to the surface using a spoon for a clearer braising liquid.

Once the water has reduced by about half, pour in the prepared braising sauce. Reduce the heat to medium-low. Stir the drumettes occasionally to ensure they are evenly coated with the sauce, allowing them to simmer and braise gently. This is also the time to add back the garlic cloves that were initially boiled with the drumettes.

Add the sliced green chilies and give everything a final stir. Turn off the heat. Drizzle with 1 tsp of sesame oil and sprinkle with 1 tsp of toasted sesame seeds to finish.
