Ingredients- 1/2 ripe melon
- Assorted seasonal fruits for topping (your favorites)
- 1/2 can (approx. 250ml) zero-calorie sparkling cider
- 1 tablespoon ricotta cheese
- Small pieces of hotteok (Korean sweet pancake) for topping (optional)
Cooking Instructions
Step 1
First, thoroughly wash the melon under running water. You can use a soft brush to ensure all dirt and impurities are removed.

To help the melon sit stably, carefully trim a very thin slice from the bottom to create a flat base. This will make it much easier to cut in the next steps.

Cut the melon in half, or slice off the top third to create a hollowed-out bowl shape. Consider the size of the serving bowl when deciding on the shape.

Using a spoon, carefully scoop out and discard the seeds from the center of the melon. The cleaner you scoop, the easier it will be to fill with fruit.

Now it’s time to separate the melon flesh. Using a knife, carefully cut the flesh away from the rind, angling the knife as you work your way around. Melons are softer than watermelons, so you can usually cut the pieces relatively easily.

Using a melon baller or a small spoon, scoop out the melon flesh into round balls. Be very careful not to pierce or break the melon rind, as this is key to creating a beautiful edible bowl.

The melon balls scooped out will be used as a topping later, so set them aside in a separate bowl.
