Easy Recipe for Mini Pumpkin Salad Using Seasonal Mini Pumpkins
Create a delicious and healthy salad using sweet mini pumpkins that are in season! It’s quick and easy to make using a steamer or microwave. The natural sweetness of the pumpkin combined with the crunch of nuts makes for a satisfying yet low-calorie meal. You can also enjoy this with regular pumpkin, especially during the summer season.
Ingredients- 2 Mini Pumpkins or Pumpkin (total 400g)
- A handful of nuts (walnuts, almonds, etc.)
- 1-2 Tbsp Mayonnaise
- 1-2 Tbsp Plain Greek Yogurt
- 1/2 Tbsp Honey or Oligosaccharide
Cooking Instructions
Step 1
First, it’s important to thoroughly wash the mini pumpkins (or pumpkin) you’ll be using. Sprinkle a little baking soda and gently scrub with a soft sponge to remove any pesticides or dirt from the skin.
Step 2
Place the pumpkin on a microwave-safe plate with the stem facing down. Cover with plastic wrap or a microwave-safe lid and heat for about 1 minute and 30 seconds. This slightly softens the stem area, making it easier to cut later.
Step 3
Once slightly softened, carefully remove the stem part from the microwave. Then, use a spoon to thoroughly scoop out the seeds and stringy insides, leaving the pumpkin cavity clean.
Step 4
Place the hollowed-out pumpkin back on the microwave-safe plate, cover again with plastic wrap, and microwave for another 5 minutes. This ensures the pumpkin is completely tender all the way through. Be cautious as it will be hot; let it cool slightly before peeling off the skin.
Step 5
Transfer the peeled, cooked pumpkin to a medium-sized bowl. Use a fork or a masher to mash the pumpkin until it’s smooth and lump-free. It’s easier to mash when slightly cooled rather than piping hot.
Step 6
Add the dressing ingredients to the mashed pumpkin. Mix in 1-2 tablespoons of mayonnaise, 1-2 tablespoons of plain Greek yogurt, and 1/2 tablespoon of honey or oligosaccharide for sweetness. Finally, add a generous handful of your chosen nuts and mix everything together until well combined.
Step 7
Check that all ingredients are well blended, then transfer the salad to a nice serving dish. Your delicious and healthy mini pumpkin salad is ready! Enjoy it as is, or serve it with bread or crackers.
