  • 300g White or Brown Sugar
  • Optional: Juice of 1/2 Lime or Lemon
  • 1 bottle Chilled Cider (or sparkling water)
  • Ice Cubes, as needed

Thoroughly cleaning the peaches is key! Lightly sprinkle baking soda or rub with salt on the peach surface, then rinse well under running water. This method effectively removes peach fuzz for a cleaner finish.

Prepare your glass jar by boiling it in water for about 3 minutes to sterilize. After sterilizing, invert the jar on a rack to let it dry completely. Ensuring the jar is thoroughly dry prevents mold and allows for longer storage. Don’t forget to sterilize the lid too!

You can prepare the peaches however you like! I peeled one peach and sliced it thinly, while leaving the skin on the other peach and slicing it thinly as well. While you can peel all the peaches, leaving the skin on adds a beautiful reddish hue to the syrup, making it look more appetizing. Remove the pits and use only the flesh.

In a large bowl, combine the prepared peach flesh (400g) and sugar (300g). You can adjust the amount of sugar based on the sweetness of your peaches and your personal preference. Mix them well with a spoon until evenly combined. If you’d like an extra zing of freshness, adding a bit of lime or lemon juice at this stage is a great idea.

Carefully pack the peach and sugar mixture into the sterilized and completely dry glass jar. Loosely cover the jar with its lid and let it sit at room temperature for one day to ferment. During this time, the sugar will dissolve, and the delightful aroma of peaches will fill the air. After the initial day, store the jar in the refrigerator.
