Main Ingredients- 1 can (340g) sweet corn, drained
- 1 red chili pepper, finely minced
- 1 green chili pepper, finely minced
- 1/2 cup tempura powder (based on paper cup)
- 1/3 cup water (based on paper cup)
- 1/2 teaspoon salt
- Plenty of cooking oil
- Sweetened condensed milk, a drizzle (to taste)
Cooking Instructions
Step 1
In a large bowl, combine the tempura powder and water. Whisk until smooth, ensuring there are no lumps. If the batter is too thick, add a little more water; if it’s too thin, add a bit more tempura powder until it reaches a slightly thick consistency.
Step 2
Lightly drain the sweet corn from the can and add it to the bowl. Mix in the finely minced red and green chili peppers. Gently combine these ingredients with the tempura batter, being careful not to mash the corn kernels.
Step 3
Add 1/2 teaspoon of salt to the batter and mix well to season. While the corn is naturally sweet, salt helps to balance the overall flavor. Taste and adjust seasoning if needed by adding a tiny bit more salt.
Step 4
Heat a generous amount of cooking oil in a pan over medium heat. Ladle portions of the batter into the hot oil, shaping them into round, flat fritters. Fry until golden brown and crispy on both sides, allowing the corn kernels to become slightly toasted and crunchy. Adding more oil during cooking can enhance crispiness.
Step 5
Arrange the perfectly cooked corn fritters attractively on a serving plate. Drizzle with sweetened condensed milk to your liking for a sweet finish. These are wonderful as a snack for children or a light accompaniment to drinks. Enjoy them while they are warm!
