How to Make Delicious Homemade Pumpkin Porridge

Ingredients- Prepared pumpkin, 500g
- Brown sugar, 1 Tbsp
- Salt, 1/3 tsp
- Honey (to taste)
- Water, 300ml
- Glutinous rice flour, 4-5 Tbsp
- Water, 1 cup (for rice flour mixture)
Cooking Instructions
Step 1
First, wash the pumpkin thoroughly. Cut it in half, scoop out and discard the seeds, then dice it into bite-sized cubes.
Step 2
Place the cubed pumpkin into a pot and add enough water (300ml) to partially cover the pumpkin. Cover the pot with a lid and simmer over medium heat for about 15 minutes, or until the pumpkin is very soft and tender.
Step 3
Once the pumpkin is cooked, drain any excess water. While still warm, use a potato masher or a fork to mash the pumpkin until it’s completely smooth and lump-free. You can mash it directly in the pot.
Step 4
In a separate bowl, combine the glutinous rice flour (4-5 Tbsp) with 1 cup of cold water. Whisk until the flour is fully dissolved and the mixture is smooth, ensuring there are no lumps.
Step 5
Gradually pour the prepared glutinous rice flour mixture into the pot with the mashed pumpkin, stirring constantly. Add more of the rice flour mixture as needed to achieve your desired porridge consistency.
Step 6
After adding the rice flour mixture, it’s crucial to keep stirring to prevent the porridge from sticking to the bottom of the pot. Ensure everything is well combined and smooth.

Now it’s time to season the pumpkin porridge. Add 1/3 tsp of salt and 1 Tbsp of brown sugar for sweetness. You can also add a little honey, to your preference, to enhance the natural sweetness.

Finally, let the porridge simmer gently over medium-low heat for a few more minutes, allowing all the flavors to meld together beautifully. Stir occasionally, and once it reaches a slightly thicker consistency, remove from heat to finish.
