Ingredients- 1 medium-sized pumpkin
- 800-900ml water
- 1/2 bowl glutinous rice (approx. 50g)
- 1.5 handfuls red beans (approx. 30g)
- 1 teaspoon salt
- 1-2 tablespoons sugar (adjust to taste)
Cooking Instructions
Step 1
First, prepare the red beans and glutinous rice. Rinse them thoroughly, then soak them in warm water for about 1 hour until softened. Cut the pumpkin in half and use a spoon to scoop out the seeds and stringy inner part.
Step 2
Place the halved pumpkin in a microwave-safe dish and microwave for 5 minutes. This step helps to soften the pumpkin, making it easier to peel. After microwaving, peel the skin off and microwave for another 3 minutes to ensure the inside is tender.
Step 3
In a blender, combine the peeled and cooked pumpkin, the soaked glutinous rice, and 800ml of water. Blend until smooth. Ensure the glutinous rice is fully blended without any lumps.
Step 4
To remove any bitterness, boil the soaked red beans in water for 3 minutes. Drain the beans and set them aside.

Pour the blended porridge mixture into a pot and begin to cook over high heat. For the first 5 minutes, stir constantly, making sure to scrape the bottom of the pot to prevent sticking.

Reduce the heat to medium or low and let the porridge simmer gently for another 10 minutes. Stirring occasionally will help achieve a smoother texture.

Be cautious of splattering as the porridge cooks, as it can cause burns. Covering the pot with a lid that’s about two-thirds closed can help contain the splatters. Lift the lid occasionally to stir the porridge and prevent it from sticking.
