  • 1 medium pumpkin (approx. 1kg)
  • 1/2 tsp salt
  • 1 Tbsp sugar (adjust to taste)
  • 500ml water
  • 3 Tbsp glutinous rice flour

First, it’s crucial to thoroughly wash the pumpkin’s skin. Using baking soda can effectively remove any pesticides or impurities. Rinse it clean under running water.

Place the washed pumpkin in an air fryer and cook at 180°C (350°F) for 15 minutes. This process concentrates the pumpkin’s natural sweetness and softens the flesh, making it much easier to mash.

While the pumpkin is roasting, prepare the glutinous rice paste. Mix 3 tablespoons of glutinous rice flour with about 100ml of water until smooth and lump-free. Then, cook over low heat, stirring constantly, until thickened. (You can adjust the water-to-flour ratio for desired consistency.)

Once the pumpkin is out of the air fryer, let it cool slightly before halving it and scooping out the seeds. It’s easier to mash while still warm. Use a spatula or fork to mash the flesh until smooth. Transfer the mashed pumpkin to a pot, add 500ml of water, and bring to a simmer over medium heat.

Once the pumpkin is cooked through and easily mashable, reduce the heat to low. Stir in the prepared glutinous rice paste, ensuring it doesn’t clump. As the porridge begins to thicken, add 1/2 teaspoon of salt and 1 tablespoon of sugar to season. (Adjust the sugar to your preferred sweetness.)
