Rice Cake Dough Ingredients

  • 3 Tbsp Sweet Pumpkin Powder (adds a subtle aroma and color)
  • 150g Cold Water (adjust based on the moisture content of the rice flour)
  • 1/2 Tbsp Salt (enhances sweetness and balances flavor)

Cooking Instructions

In a large bowl, combine 1kg of rice flour and 3 Tbsp of sweet pumpkin powder. Mix well. Add 150g of cold water and 1/2 Tbsp of salt. Rub the mixture with your hands to evenly distribute the moisture, ensuring there are no dry patches of flour and no clumps.

Sift the dough through a sieve. This step helps to create a smoother and finer texture for your rice cake. Break up any lumps you find.

Add 12 Tbsp of sugar to the rice cake dough and gently mix it in with your hands. Adding sugar will make the cake sweeter and more flavorful as it steams.

Line a steamer with a cheesecloth or steamer liner. Place the rice cake mold (sized for 1kg of flour) on top. Spread 2 cups of red bean paste thinly and evenly on the bottom of the mold. (You can also use other bean pastes like mung bean or lima bean paste.)

Pour 6 cups of the rice cake dough into the mold and spread it evenly. Cover this layer with another 2 cups of red bean paste. Repeat this process once more: pour another 6 cups of rice cake dough, spread it, and then cover with 2 cups of red bean paste.

Finish by covering the very top layer with the remaining 2 cups of red bean paste. This topping layer prevents the dough from drying out during steaming, ensuring a moist cake.

Place the mold in a preheated steamer with boiling water. Steam over high heat for 25 minutes. Once steaming is complete, turn off the heat and let it rest (steam) for 5 minutes. This resting period allows the cake to finish cooking evenly.

While the cake is steaming, prepare a large tray or plate that is slightly larger than your steamer. Once the cake is done, cover the steamer with the tray and quickly invert it to transfer the cake onto the tray. Be careful as it will be very hot.
