Baek Jong-won’s Bean Sprout Pancake That Will Surprise You with Its Deliciousness
On a rainy day, when you crave a savory pancake but only have bean sprouts on hand, don’t be disappointed! This recipe from Chef Baek Jong-won is surprisingly delicious and will leave you astonished. You might find your new favorite dish! Give this simple yet incredibly tasty bean sprout pancake a try!
Main Ingredients- 1 handful bean sprouts (approx. 100g)
- 3 Tbsp pancake mix (buchim garu)
- 1/2 Tbsp minced garlic
- 1 Cheongyang pepper (spicy Korean chili pepper)
- 1 red chili pepper
Seasoning- 1/3 Tbsp salted fermented shrimp (saeu-jeot)
- 1/3 Tbsp salted fermented shrimp (saeu-jeot)
Cooking Instructions
Step 1
First, thoroughly wash 1 handful of bean sprouts under running water and drain them well. Using fresh bean sprouts will ensure a crispier texture.
Step 2
In a large bowl, combine the washed bean sprouts, 1/2 Tbsp minced garlic, finely chopped Cheongyang pepper and red chili pepper, and 1/3 Tbsp salted fermented shrimp. Chef’s Tip: If you prefer less salt, start with 1/4 Tbsp of salted fermented shrimp and adjust to your taste. If you’re using plain flour instead of seasoned pancake mix, you might need to add a little more salted fermented shrimp for enhanced flavor.
Step 3
Now, add 3 Tbsp of pancake mix. Gradually pour in a little water while mixing with a spatula or spoon until all ingredients are well combined to form a batter.
Step 4
The batter consistency should not be too watery; a slightly thick texture is ideal. It should hold its shape when scooped with a spoon, rather than pouring off immediately. Be careful with the water amount to prevent the pancake from breaking apart.
Step 5
Heat a pan over medium heat and add a generous amount of cooking oil. Once the oil is hot, scoop portions of the batter onto the pan and use the back of your spoon to spread it thinly, about 1cm thick. Fry both sides until golden brown and crispy. If you’re not confident flipping large pancakes, it’s easier to make several smaller ones so they can be flipped more easily.
Step 6
Voila! Baek Jong-won’s bean sprout pancake, which is surprisingly delicious, is ready! The outside is perfectly crispy, while the inside retains the fresh crunchiness of the bean sprouts, making it incredibly tasty. The addition of Cheongyang peppers adds a delightful spicy kick, preventing it from being greasy. It’s a perfect accompaniment to makgeolli (Korean rice wine) or a cold beer!
