Main Ingredients- 1/2 medium zucchini
- 1 bowl of cooked rice
Cooking Instructions
Step 1
Wash the zucchini thoroughly and thinly slice it into julienne strips. Heat a generous amount of cooking oil in a pan over medium heat and stir-fry the zucchini. Be cautious as moisture from the zucchini can cause splattering. It’s important to stir-fry while mixing to prevent sticking. (Tip: Stir-frying the zucchini before all its moisture evaporates helps it absorb seasonings well and enhances its flavor.)
Step 2
Once the zucchini starts to soften and wilt, add the soy sauce and red pepper flakes, and continue to stir-fry. Avoid overcooking, as this will make the zucchini mushy and diminish its texture and taste. Cook just until it retains a slight crispness. (Tip: The sweetness of zucchini intensifies as it cooks, so adjust the cooking time according to your preference.)
Step 3
Place the stir-fried zucchini over a bowl of warm cooked rice. Gently place the egg yolk in the center of the rice. Finish by drizzling with sesame oil and sprinkling with toasted sesame seeds. (Tip: If you’re hesitant about eating raw egg yolk, you can opt to fry an egg sunny-side up and place it on top. However, note that frying the egg might slightly diminish the zucchini’s nuanced flavors.)
