Super Simple Vegetable Egg Fried Rice
Kidney-Friendly Recipe: Easy & Quick Low-Sodium, Low-Potassium Vegetable Egg Fried Rice (feat. Frozen Vegetable Mix)
A super simple vegetable egg fried rice recipe perfect for busy days, specially designed for individuals managing kidney disease. It’s quick, easy, and delicious!
Ingredients- Frozen vegetable mix: Ample amount
- Egg: 1
- Cooked rice: 1 serving
- Oyster sauce: 1 teaspoon (tsp)
- Cooking oil: Appropriate amount
- Green onion (scallion): A little (finely chopped)
Cooking Instructions
Step 1
First, place the frozen vegetable mix in a pan and add a little water to bring it to a boil. This step helps remove impurities and reduce potassium content, which is beneficial for kidney health. After boiling, drain the water.
Step 2
After draining the water, add an appropriate amount of cooking oil to the pan. Add the finely chopped green onions and sauté them. Gently cook over low heat to create fragrant green onion oil, which will enhance the flavor.
Step 3
Once the green onion fragrance is released, add the frozen vegetable mix and stir-fry them together. Continue to cook until the vegetables are softened.
Step 4
When the vegetables and green onions are well combined and the aroma of green onion oil fills the air, add 1 serving of cooked rice. Use a spatula to break up the rice clumps and stir-fry everything together until well mixed. It’s important to ensure the rice grains are separated.
Step 5
Once the rice is somewhat fried, create a small well in the center of the fried rice. Carefully crack the egg into this space.
Step 6
Reduce the heat to medium and gently break and stir the egg in the center with your spatula as it begins to cook. You’ll notice the egg starting to incorporate into the rice, releasing a savory aroma.
Step 7
At this stage, you can adjust the doneness of the egg to your preference. If you prefer a moist fried rice where the egg coats the rice grains, mix the egg with the rice while it’s still slightly undercooked. If you prefer a texture where the egg is cooked separately like scrambled eggs, mix it in once it reaches your desired level of doneness.
Step 8
Continue to stir-fry everything together until the egg is evenly distributed and coats the rice grains beautifully. This adds a tender texture to the fried rice.
Step 9
Finally, add 1 teaspoon of oyster sauce to season. One teaspoon of oyster sauce contains approximately 1g of salt (about 400mg of sodium), which is helpful to keep in mind for low-sodium diets.
Step 10
Stir-fry well to ensure the oyster sauce is evenly mixed with the rice, vegetables, and egg. Your delicious vegetable egg fried rice is now ready!
Step 11
Transfer the warm fried rice to a serving bowl. Enjoy your tasty and healthy meal! ^^
