Who doesn’t have a can of tuna in their pantry? This magical tuna mayo rice bowl comes together in a flash with just rice, tuna, and mayonnaise. It’s a satisfying meal you can whip up in about 10 minutes, perfect for those busy days.

Ingredients

  • 1 can (approx. 100g) Tuna
  • 1 bowl warm cooked rice
  • 2 Eggs
  • 1/2 Onion
  • A small amount of green part of scallions or green onions
  • 3 Tbsp Mayonnaise
  • 2 tsp Soy sauce
  • 2 tsp Oligodang (Korean corn syrup) or other liquid sweetener
  • 2 tsp Mirin (rice wine)
  • Pinch of Salt
  • 1 Tbsp Milk (for egg mixture, optional)
  • Shredded seaweed or seasoned seaweed for garnish (optional)

Cooking Instructions

Step 1

First, drain the oil from the canned tuna thoroughly using a sieve. This step ensures a cleaner and more refined flavor for your tuna mayo mixture.

Step 2

Divide the onion in half. Finely dice one half and thinly slice the other half. The diced onion will go into the tuna mayo sauce, and the sliced onion will be used for the savory topping.

Step 3

Finely chop the green parts of the scallions or green onions. These will be used as a fresh garnish, so aim for small, uniform pieces.

Step 4

Let’s make some fluffy scrambled eggs! In a bowl, crack the 2 eggs. Add 1 tablespoon of milk and a pinch of salt. (Adding milk makes the eggs extra tender!) Whisk the eggs well until smooth. Heat a non-stick pan over low heat, pour in the egg mixture, and gently stir with a spatula or chopsticks, creating soft curds until cooked through. Aim for a creamy, fluffy texture.

Step 5

Next, we’ll prepare the sweet and savory caramelized onions. Heat a pan over medium heat and add 2 teaspoons of soy sauce, 2 teaspoons of oligodang, and 2 teaspoons of mirin. Once it starts to bubble, add the sliced onions. Sauté until the onions become translucent and slightly tender. Be careful not to burn them.

Step 6

Now it’s time to make the tuna mayo filling. In a bowl, combine the drained tuna, the finely diced onion, and 3 tablespoons of mayonnaise. Mix everything together thoroughly. The diced onion adds a lovely crunch and extra flavor!
