I’ve made tteokgalbi many times before, and this time I tried a style inspired by the TV show ‘Youn’s Kitchen’. Previously, I’ve added ingredients like balloon flowers or deodeok for a more unique twist. However, as time goes by, I find myself preferring simpler methods. Instead of the tedious process of mincing and kneading meat, this recipe uses readily available bulgogi-cut beef and rice cakes to create a truly delicious tteokgalbi with actual rice cakes inside. You can save time and effort while still enjoying a rich flavor.
Main Ingredients- 200g thinly sliced beef (bulgogi cut)
- 4 rice cake wraps (thin rice cakes similar to tortillas)
- 2 stalks green onions
Cooking Instructions
Step 1
First, finely chop the 2 stalks of green onions into pieces about 2-3 cm long, making them easy for everyone to eat.
Step 2
The special ingredient that makes this recipe unique is the rice cake wrap! These are thin and soft, perfect for wrapping around meat. While usually used to wrap grilled meat, today we’ll use them inside our tteokgalbi to add a delightfully chewy texture. If you have colorful wraps (yellow, mugwort green, white, pink), your tteokgalbi will look even more appealing. They are easy to tear by hand, making them convenient to use.
Step 3
To make this delicious beef dish, tteokgalbi, more easily, we’re using pre-cut bulgogi beef from the market. Unlike traditional tteokgalbi that requires extensive mincing and kneading, using bulgogi beef makes the process much more manageable. The defining characteristic of this recipe is the inclusion of actual rice cakes, which contribute to a satisfying chewiness and tender texture.
Step 4
Spread out the bulgogi beef slices one by one on a large plate or cutting board. Place the chopped green onions and the rice cake wraps evenly on top of the beef.
Step 5
Gently roll up the beef, enclosing the green onions and rice cake wraps inside, similar to how you would roll a kimbap. Make sure to roll it tightly so the filling doesn’t come out, much like making a fresh spring roll.
Step 6
These rolled pieces are our tteokgalbi! See how simple it is? Because it contains actual rice cakes, we can truly call it ‘tteokgalbi’. For the sauce, we’ve used only ‘charcoal-grilled flavor meat sauce’. This is similar to store-bought BBQ sauce, so feel free to use any BBQ sauce you have on hand. If you don’t have any, you can easily make a delicious sauce by mixing soy sauce with honey or corn syrup.
Step 7
Heat a pan and add the natural seasoning broth and the charcoal-grilled flavor meat sauce. Bring it to a simmer. Once the sauce is boiling, carefully place the rolled tteokgalbi into the pan. Cook them, turning them frequently, ensuring they brown nicely on all sides and cook through. For an extra smoky flavor and even cooking, you can use a kitchen torch to lightly sear the surfaces at the end.
Step 8
Arrange the nicely cooked tteokgalbi on a serving plate. Finish with a light sprinkle of sesame seeds for a nutty aroma and an even more appealing presentation. It’s best enjoyed while still warm!
