Inspired by Macaron_Lady’s tofu and egg fried rice recipe, I decided to try making a pancake by topping it with cheese. It turned out to be incredibly delicious! This recipe is a winner.
Ingredients- 1/2 block Tofu (approx. 150g)
- 2 Eggs
- About 1 cup Cheese (e.g., Mozzarella or Cheddar)
- 1 tsp Salt
Cooking Instructions
Step 1
The first crucial step is to remove as much moisture from the tofu as possible. Heat a dry non-stick skillet over medium-low heat. Add the tofu and crumble it with a spatula while stir-frying to remove moisture. This helps prevent the pancake from becoming soggy and enhances its nutty flavor. Once the tofu has dried out sufficiently, sprinkle in 1 tsp of salt and spread it evenly. Break up any large clumps of tofu as you cook.
Step 2
Spread the cooked tofu evenly across the pan to form a base. Whisk the 2 eggs in a separate bowl and pour them evenly over the tofu. As the edges of the egg mixture begin to set, you can gently mix it with the tofu using chopsticks or a spatula, or simply let it cook. Maintain medium-low heat and cook until the egg is about halfway set.
Step 3
Once the egg is about halfway cooked, generously and evenly sprinkle about 1 cup of your chosen cheese (like mozzarella or cheddar) over the tofu and egg mixture. Adding a good amount of cheese will result in a wonderfully melty and stretchy texture when served. Feel free to use your favorite cheese for enhanced flavor.
Step 4
After adding the cheese, immediately cover the skillet with a lid. Cook on low heat for about 2-3 minutes, or until the cheese is completely melted and the egg and tofu are cooked through. Be mindful of the heat to prevent burning.
