Main Ingredients

  • 1 pack of Eonyang-style Bulgogi (approx. 200-300g)
  • 1 handful of boiled and minced bean sprouts (approx. 50g)
  • 3 Cheongyang chili peppers
  • 1 handful of chives (approx. 50g)
  • 6 squid (medium size)
  • 4 eggs

Cooking Instructions

Step 1

Prepare all the ingredients for making stuffed squid. Clean the squid thoroughly, and finely chop the bean sprouts, chives, and chili peppers.

Prepare one pack of Eonyang-style Bulgogi, easily found at supermarkets. It’s convenient because it’s already seasoned, skipping complex seasoning steps.

In a large bowl, combine the Eonyang-style Bulgogi, one handful of boiled and squeezed bean sprouts (finely chopped), one handful of chopped chives, 1 Tbsp minced garlic, finely chopped Cheongyang chili peppers, and the minced tentacles from inside the squid. (Adding minced squid tentacles enhances the texture.)

Crack in 4 eggs, add a pinch of salt, a pinch of black pepper, 1 tsp of sesame seeds for a nutty flavor, and 1 tsp of sesame oil to enhance the aroma. Adjust the salt amount as the Eonyang-style Bulgogi is already seasoned.

Gently mix all the ingredients in the bowl with a spatula or your hands. Be careful not to overmix, as it can make the squid tough. Mix just until the ingredients are evenly combined.

Carefully stuff the cleaned squid bodies with the prepared filling using a spoon. Don’t overfill, as it might burst when cooked; aim for about 70-80% full. Securely seal the opening of the squid with toothpicks to prevent the filling from leaking out.

Place the prepared stuffed squid neatly in a steamer basket over boiling water. Cover and steam over high heat for about 10 minutes. The cooking time may vary depending on the size of the squid and the heat intensity.

The well-steamed stuffed squid will have an appetizing orange color. To slice, keep the toothpicks in place while cutting; this prevents the filling from spilling out. Remove the toothpicks after slicing for a clean presentation.
