Making Kalguksu from scratch, including the noodles and broth, can be quite a process. Today, we’ll be using store-bought Kalguksu noodles to make an incredibly simple version of this beloved dish. Ingredients- 1 serving of Kalguksu noodles (store-bought)
- 1 sachet of liquid soup base (included with noodles)
- 500ml water
- 1/4 potato (small)
- A small amount of zucchini
- A small amount of carrot
- 1/4 onion (small)
- 1/2 handful of green onions (scallions)
- 1/2 handful of shredded seaweed (garnish)
- A pinch of sesame seeds (garnish)
Cooking Instructions
Step 1
First, let’s talk about the liquid soup base – this is the secret ingredient that transforms plain water into a rich and savory broth. You can add other vegetables you have on hand, like mushrooms or spinach, as they all complement the flavors beautifully. Adding green onions will significantly enhance the broth’s refreshing taste.

For a single serving, pour 500ml of cold water into a pot. Add the carrots and potatoes, as they take longer to cook. Then, add the liquid soup base and bring it to a boil over medium-high heat. If you’re making a larger batch, simply scale up all the ingredients proportionally.

Before adding the noodles, give them a quick rinse under cold running water. This step is crucial to remove excess starch, which prevents the broth from becoming cloudy and stops the noodles from clumping together. Make sure to add the rinsed noodles immediately to the pot; leaving them sitting for too long will cause them to become mushy.
