- 3 Tbsp water (to prevent the sauce from sticking)
- 1 Tbsp sugar (balances the sourness of the kimchi and adds umami)
- 0.5 Tbsp Dashida (MSG-based seasoning, optional) (enhances the flavor)
- 1 Tbsp gochugaru (Korean chili flakes) (adjust to your spice preference)
- 2 Tbsp sesame oil (for a nutty aroma at the end)
- 3 Tbsp cooking oil (prevents the kimchi from burning)
- 3 Tbsp kimchi juice (the key to rich flavor!)
- 3 Tbsp water (to prevent the sauce from sticking)
Cooking Instructions
Step 1
First, let’s prepare the seasoning base for our delicious stir-fried kimchi. In a small bowl, combine 1 tablespoon of sugar, 0.5 tablespoon of Dashida (or your preferred MSG seasoning), and 1 tablespoon of gochugaru. Mix them well. Having the seasoning ready beforehand will make the stir-frying process much smoother.
Step 2
Heat 3 tablespoons of cooking oil in a pan over medium heat. Add the prepared half head of kimchi and begin to stir-fry. Keep stirring occasionally to prevent the kimchi from sticking to the pan. Continue cooking until the kimchi has slightly softened.
Step 3
Once the kimchi is cooked and well combined with the oil, push the kimchi to one side of the pan. Add the 3 tablespoons of kimchi juice and the prepared seasoning mixture to the empty space. Let the seasoning simmer for a moment, then mix everything together thoroughly with the kimchi. This step ensures the seasoning evenly coats the kimchi, making it even more delicious.
Step 4
As you continue to stir-fry, the seasoning might start to stick to the bottom of the pan. If this happens, carefully add 3 tablespoons of water and continue to stir and cook the kimchi, ensuring it doesn’t burn. Adding water helps prevent the seasoning from scorching and keeps the kimchi moist.
Step 5
When the kimchi has completely wilted and the seasoning has reduced to a nice glaze, drizzle in 2 tablespoons of sesame oil for that final nutty fragrance. Give it a quick final stir, and your delicious stir-fried kimchi is ready!
Step 6
Transfer the perfectly stir-fried kimchi to a serving dish. It’s delicious served over a bowl of hot rice, used as a filling for kimbap, or as a staple side dish. It’s the perfect way to use up leftover kimchi!
