Ingredients & Seasoning- Dried shrimp 50g (Choose plump, unbroken ones for the best texture)
- Soy sauce 1 Tbsp (Adjust to your salt preference)
- Cooking wine (Mirin) 1 Tbsp (Removes gamey odor and adds shine)
- Fish sauce (or Tuna extract) 1 tsp (Boosts umami)
- Gochujang (Korean chili paste) 1 Tbsp (For a touch of spiciness and depth)
- Corn syrup (or Oligosaccharide) 1 Tbsp (For glaze and sweetness)
- Toasted sesame seeds 1 tsp (For nutty flavor)
- Cooking oil 2 Tbsp
Cooking Instructions
Step 1
First, prepare 50g of dried shrimp. It’s best to use ‘deujeol saeu’ (shrimp with heads removed), which are plump and unbroken, as they maintain a better texture and appearance. If your dried shrimp have heads attached, you can remove them.
Step 2
Heat 2 Tbsp of cooking oil in a pan over medium heat. Add the prepared dried shrimp and begin to stir-fry. Fry them until they release their characteristic nutty aroma.
Step 3
As you stir-fry the shrimp, you’ll notice the oil being absorbed and the shrimp turning a vibrant reddish-orange color, making them look more appealing. At this point, add 1 Tbsp of cooking wine (Mirin). Mirin helps to eliminate any fishy smell and enhances the overall flavor.
Step 4
Once the shrimp are sufficiently stir-fried, transfer them to a separate bowl. Then, in the same pan, add 1 Tbsp soy sauce, 1 Tbsp cooking wine (separate from what you added earlier), 1 tsp fish sauce, 1 Tbsp gochujang, and 1 Tbsp corn syrup. Mix them together to create the seasoning sauce and bring it to a simmer.
Step 5
Cook the seasoning sauce over low heat, stirring constantly to prevent it from burning or sticking to the bottom of the pan. Ensure the sauce simmers evenly. Once the sauce starts to gently bubble, proceed to the next step.
Step 6
Now, add the stir-fried dried shrimp back into the pan with the simmering sauce. Important: Turn off the heat! Mixing the shrimp with the sauce off the heat will prevent the sauce from reducing too much and becoming overly thick or sticky.
Step 7
Gently toss the shrimp to coat them evenly with the sauce. Then, turn the heat back on to very low and stir-fry for just about 10-20 seconds, as if you’re just warming it through. This brief warming period allows the flavors of the sauce to subtly penetrate the shrimp.
Step 8
Finally, sprinkle 1 tsp of toasted sesame seeds over the top for garnish. Your delicious stir-fried dried shrimp, with its delightful balance of savory and slightly sweet notes, is now ready! It makes an excellent side dish for rice.
