Main Ingredients- 1 large can of Spam
- 1 onion
- 1 enoki mushroom pack
- 1 Korean chili pepper (cheongyang chili)
- 1 green onion
- 1 potato
Golden Sauce- 3 Tbsp soy sauce
- 1 Tbsp minced garlic
- 2.5 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp gochujang (Korean chili paste)
- 1 Tbsp sugar
- 500ml water
- 3 Tbsp soy sauce

Step 2
Let’s prepare the braising sauce, the heart of this delicious dish! In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of minced garlic, 2.5 tablespoons of gochugaru, 3 tablespoons of gochujang, and 1 tablespoon of sugar. Pour in 500ml of water and whisk thoroughly until all ingredients are well combined. You can already smell the amazing flavors!
Step 3
Now, let’s prep the vegetables. Chop the onion coarsely or slice it. Peel the potato and slice it into 0.5cm thick half-moons or cubes. Slice the Korean chili pepper and green onion diagonally. For the enoki mushrooms, trim off the root end and separate the strands.
Step 4
Place the whole can of Spam into a ziplock bag or plastic wrap. Use a rolling pin or a bottle to firmly press down and mash the Spam inside the bag. This process helps to infuse the Spam’s savory flavor into the braising liquid, making the dish even more delicious.
Step 5
In a deep pot or pan, add the prepared vegetables (onion, potato), the mashed Spam, and the braising sauce. Bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer for about 10-15 minutes, or until the potatoes are tender. Gently stir the ingredients occasionally to ensure the sauce coats everything evenly.
Step 6
When the potatoes are almost cooked through, just before turning off the heat, add the prepared enoki mushrooms, diagonally sliced green onion, and Korean chili pepper. Simmer for just another minute or two until the enoki mushrooms are slightly wilted. Turn off the heat, and your delicious Spam and Tofu Braise is ready to be enjoyed! It’s perfect served over rice.
