  • Black pepper, a pinch
  • 1 Cheongyang pepper (add more if you like it spicy)

Sweet & Savory Soy Glaze

  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Water
  • 1 Tbsp Soy Sauce
  • 1/2 Tbsp Minced Garlic
  • 1/2 Tbsp Sugar
  • 1/2 Tbsp Oligodang (corn syrup) or corn syrup

Cooking Instructions

Step 1

First, cut the pork into bite-sized pieces that are not too thick for easy cooking. If they are too thin, they might break apart during cooking, so aim for a moderate thickness.

Season the prepared pork with a pinch of salt and a pinch of black pepper, then gently toss to marinate. This step helps remove any gamey smell from the pork and allows the seasoning to penetrate, making it more flavorful.

Remove the stem from the Cheongyang pepper and slice it thinly on an angle. If you prefer less spice or are cooking for children, you can omit it or adjust the amount.
