Main Ingredients- 3 large eggs (approx. 180g)
- 200g fresh water
- 1g salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, in a bowl, combine the 3 eggs, 200g of fresh water, 1g of salt, and a pinch of black pepper. Gently whisk them together until just combined; avoid creating too much foam. You can use chopsticks or a whisk, just mix until the eggs are broken up.
Step 2
Before cooking, it’s best to remove any foam from the surface of the egg mixture, as it can affect the final texture. Use a kitchen torch or a spoon to skim off as much foam as possible for an even smoother steamed egg. While this step is optional, it significantly enhances the delicate texture.
Step 3
Pour the prepared egg mixture into a zip-top bag. Carefully remove as much air as possible to create a vacuum seal. A helpful tip is to submerge the bag halfway in water while you press the air out and then seal it; this naturally pushes the air out.
Step 4
Preheat your sous vide machine to 80°C (176°F). Once the water reaches the desired temperature, carefully place the vacuum-sealed bag of egg mixture into the sous vide bath. Cook for exactly 1 hour. The 80°C temperature is ideal for achieving a tender, custardy texture without overcooking.
Step 5
After 1 hour, gently remove the steamed egg bag from the sous vide bath. Carefully transfer the perfectly cooked steamed egg into a serving dish. Since it’s very tender from the sous vide process, handle it with care to avoid breaking.
Step 6
