Ingredients

  • 5 large eggs (room temperature)
  • 1 handful chopped green onions (approx. 30g)
  • 1/4 medium onion (finely minced)
  • 1 red chili pepper (seeds removed, finely minced)
  • 15 Tbsp Cham Sauce (150ml)

Cooking Instructions

Step 1

Before boiling, let the eggs sit at room temperature for about 30 minutes. This helps prevent the shells from cracking during boiling and ensures more even cooking.

Step 1

Step 2

Finely mince 1/4 of an onion. Minced onion adds a subtle sweetness and depth of flavor to the marinade.

Step 2

Step 3

Finely mince 1 red chili pepper after removing the seeds. This adds a pleasant hint of spice. Feel free to adjust the amount or omit if you prefer less heat.

Step 3

Step 4

Finely chop the green onions. Combine the minced onion, red chili pepper, and green onions in a bowl. Having your aromatics prepped makes the cooking process much smoother.

Step 4

Step 5

Fill a pot with enough water to fully submerge the eggs and bring it to a boil over high heat. Once the water is at a rolling boil, carefully add the room-temperature eggs. Using a spoon helps prevent the eggs from cracking against the bottom of the pot.

Step 5

Step 6

Once the water returns to a boil, reduce the heat to medium and cook the eggs for exactly 8 minutes. This duration is perfect for achieving a beautifully soft-boiled egg with a jammy yolk and tender white.

Step 6

Step 7

Immediately after 8 minutes, remove the eggs from the boiling water and transfer them to an ice bath for about 5 minutes. This stops the cooking process and makes the shells much easier to peel. Once cooled, gently peel the shells.

Step 7

Step 8

Pour 15 tablespoons (150ml) of Cham Sauce into the bowl containing the prepped green onions, minced onion, and red chili pepper. This simple base creates a flavorful marinade.

Step 8

Step 9

Stir the marinade ingredients thoroughly with a spoon until everything is well combined. Ensure the flavors are evenly distributed.

Step 9

Step 10

Place the peeled soft-boiled eggs into a zip-top bag or an airtight container. Using a zip-top bag is convenient for marinating.

Step 10

Step 11

Pour the prepared Cham Sauce marinade over the eggs, ensuring they are fully submerged.

Step 11

Step 12

Seal the bag or container and refrigerate for at least half a day (6 hours) to allow the flavors to meld. For an even deeper flavor, let it marinate for a full day. Enjoy these delicious eggs over rice or as a side dish!
