A Scallion Pancake Perfect for Anyone Living Alone
Using fresh, young scallions from my garden, I’m making a delicious scallion pancake with a thin, crispy batter. It doesn’t require any special ingredients. The scallions are tender and sweet right now, giving this pancake a wonderfully intense scallion flavor. Even those living alone can easily make and enjoy this delightful dish!
Ingredients- Trimmed Scallions (about one bunch, fresh from the garden or store-bought)
- 3/4 cup Tempura Flour
- 1 cup Water
- 1 Egg
- Cooking Oil (generous amount)
Cooking Instructions
Step 1
I used scallions I harvested from my garden and trimmed them. However, feel free to use pre-trimmed scallions available at your local market or grocery store. This is especially convenient for busy students or professionals.
Step 2
I exclusively use tempura flour for all my frying and pan-frying needs. I keep a bag of tempura flour handy for making both pancakes and fried dishes. In a bowl, combine 3/4 cup of tempura flour with 1 cup of cold water. Whisk thoroughly until a smooth batter forms. Ensure there are no lumps.
Step 3
In a separate small bowl, lightly beat one egg. You don’t need to whisk it perfectly smooth; just ensure the yolk and white are roughly combined. This completes the ingredient preparation. It’s that simple!
Step 4
Heat a non-stick pan over medium-high heat and add a generous amount of cooking oil. Once the oil is shimmering, carefully arrange the prepared scallions in a single layer across the pan. If your pan is small, you can cut the scallions in half and arrange them without overlapping, following their natural direction.
Step 5
Next, evenly drizzle the prepared batter over the scallions. Aim for a thin, even coating. This thin layer of batter will help bind the scallions together and create a crispy texture.
Step 6
Continue to pour the batter until the scallions are just beginning to stick together. You want enough batter to bind them, but not so much that it becomes thick and heavy.
Step 7
Gently press down on the scallions with a spatula once the batter has set slightly. This helps to ensure the scallions adhere well to the batter and prevents them from lifting.
Step 8
Once the scallion side is cooked and lightly golden, pour the lightly beaten egg evenly over the entire pancake. The egg will add richness and help bind everything together.
Step 9
When the egg is mostly set, carefully flip the scallion pancake using a spatula. Cook the other side until it’s also golden brown and crispy. Enjoy your delicious, homemade scallion pancake!
