Main Ingredients- 20 Vienna sausages (or your favorite sausages)
- 1 stalk of green onion (focus on the white part)
- 1/2 onion
- 1/3 carrot
- 1 bell pepper (red or green, or any color bell pepper you have on hand)
- A small amount of other leftover vegetables from the fridge (e.g., mushrooms, zucchini, broccoli) (optional)
Cooking Instructions
Step 1
First, make 2-3 diagonal scores on the Vienna sausages to create a nice shape when cooked. Blanch the sausages in boiling water for about 1 minute. This helps remove excess grease, making them lighter, and prevents them from bursting during stir-frying. Drain the blanched sausages and rinse them under cold water. Slice the white part of the green onion diagonally. Chop the onion, carrot, and bell pepper (or other vegetables) into bite-sized pieces, similar in size to the sausages. Note that carrots are firmer, so slicing them a bit thinner will reduce cooking time.
Step 2
Heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add the sliced green onions and stir-fry until fragrant, creating ‘green onion oil’. Once the aroma of the green onions is released, add the onions and stir-fry until they become translucent. Then, add the prepared carrots, bell peppers, and the blanched Vienna sausages. Increase the heat to high and stir-fry quickly. The key here is to maintain the crispness of the vegetables, so avoid overcooking.
Step 3
Once the vegetables and sausages are somewhat stir-fried, push the ingredients to one side of the pan. Pour 1 Tbsp ketchup, 1 Tbsp oyster sauce, and 1 Tbsp oligosaccharide into the empty space and let it simmer for a moment. As the sauce starts to bubble, quickly mix all the ingredients together and stir-fry. Continue cooking until the sauce coats everything evenly and develops a nice sheen. Turn off the heat, then sprinkle with sesame seeds and toss gently. Your delicious Ssoya Bokkeum is ready!
