Ingredients

  • 4 medium potatoes
  • 1 bag mozzarella pizza cheese (approx. 150g)
  • Olive oil, as needed
  • Salt, a pinch
  • Dried parsley, a pinch
  • 2 eggs

The ingredients are incredibly simple! First, peel and thoroughly wash the 4 potatoes. Then, thinly slice them into julienne strips. Place the julienned potatoes in a bowl and rinse them once or twice under cold water to remove excess starch; this will help them cook more cleanly. Heat a pan over medium-low heat and add a generous amount of olive oil. Add the julienned potatoes and begin to sauté them. Gently stir to prevent the potato strands from breaking. Lightly season the potatoes with salt. Be mindful of the saltiness of the cheese later, so you might want to adjust the salt quantity or even omit it. Covering the pan briefly will help speed up the cooking process. If you prefer a crispier texture, you can mix in 1 tablespoon of flour (like pancake mix, glutinous rice flour, or starch) with the potatoes before cooking; this will make them even crispier. Today, however, we’ll stick to the basics without any added flour to highlight the natural flavors.

Once the potatoes are almost cooked through, crack 2 eggs into a separate bowl and whisk them well. Pour the beaten eggs evenly over the cooking potatoes in the pan. Gently spread the eggs with a chopstick or spatula so they cover the potatoes evenly, and let the eggs cook.
