Weekend Morning Recipe: Effortlessly Delicious Potato and Egg Brunch
On a leisurely Sunday morning, I whipped up a super simple brunch using potatoes and eggs! It’s a perfect recipe for a relaxed start to your day.
Main Ingredients- 4 fresh eggs
- 1 medium potato
- 1/2 onion
- 2 slices of cheese (mozzarella or your favorite kind)
Seasoning & Others- 1 tsp salt
- Pinch of pepper

Cooking Instructions
Step 1
First, prepare the potatoes and onions that will add flavor to your brunch. Peel the potatoes and onion, then dice them finely into small pieces, about 0.5 cm, smaller than a teaspoon. Dicing them small ensures they cook quickly and blend well with the eggs.
Step 2
Heat a frying pan over medium heat and add a generous amount of olive oil. Add the diced potatoes and onions and stir-fry. Continue to sauté until the potatoes are slightly translucent and the onions have softened. Add 1 tsp of salt and continue to cook until the ingredients are golden brown and look appetizing. Be sure not to cook over high heat to prevent burning and ensure even cooking.
Step 3
In a separate bowl, crack the 4 fresh eggs and whisk them thoroughly with a fork or whisk until smooth. It’s important to whisk the eggs well so the mixture isn’t too thick. Add all the sautéed vegetables to the egg mixture. Add a pinch of pepper, if desired, and gently combine everything.
Step 4
Now it’s time to pour the egg mixture and complete the brunch. Lightly coat the frying pan with olive oil again and preheat over medium-low heat. Pour the egg mixture evenly into the pan, spreading it out to form a large circle. Place the 2 slices of cheese on top. The cheese will melt and add wonderful flavor. Cover with a lid and cook slowly for about 15 minutes, or until the eggs are fully set and the cheese is melted. Patience is key to ensure the inside cooks through perfectly.
Step 5
Finally, it’s time to add a lovely golden-brown finish. Once the eggs are mostly set, carefully flip the brunch over using a spatula. After flipping, cook for another 2-3 minutes over low heat until the entire dish has a delicious golden-brown color. This will result in a perfect brunch that’s slightly crispy on the outside and wonderfully tender on the inside!
