Indulge in smooth, creamy sweetness right at home! Try making ‘Xing Ren Dou Fu’, a dessert popular in China and Hong Kong, with incredible ease. Despite its name, Xing Ren Dou Fu isn’t tofu at all, but rather a delightful dessert similar to a smooth milk pudding. Intrigued by the unique taste of this dessert, also known as ‘An Nin Dou Fu’, I decided to give it a try after planning for a week! Surprisingly, it only takes about 10 minutes to make, offering a sweet escape during your busy day.
Pudding Ingredients- 400cc Milk (approx. 2 cups)
- 80g Sugar (approx. 1/2 cup, adjust to taste)
- 10g Sheet Gelatin (approx. 3-4 sheets)
- 2cc Vanilla Extract or Vanilla Essence (approx. 1/2 teaspoon)
Cooking Instructions
Step 1
First, let’s prepare the gelatin, which gives the pudding its delightful wobbly texture. If you’re unsure of the exact weight of your sheet gelatin, a common size like 22x8cm is about 3g per sheet. So, to reach 10g, you’ll need about 3 to 4 sheets.
Step 2
Fill a wide bowl with plenty of cold water. Tear the sheet gelatin into manageable pieces and submerge them in the water. Let them soak for about 5 to 10 minutes until they become soft and pliable. Once they’ve absorbed water and softened, they’re ready.
Step 3
In a separate pot or bowl, carefully pour in 400cc of fresh, cold milk.

Add 80g of sugar to the milk to bring in sweetness. You can adjust the sweetness to your preference, but I recommend following the recipe initially and then tweaking it to your taste.

Stir in 2cc of vanilla extract or vanilla essence for an aromatic touch. (Tip: While the standard order is often to add vanilla before gelatin, it’s perfectly fine to add it now for your own creative ‘kitchen hack’ version!)
Step 6
Using a spatula or whisk, gently stir the milk mixture until the sugar and vanilla are well combined. It’s important to ensure the sugar dissolves completely without clumping.
Step 7
Once the gelatin sheets are fully softened, gently squeeze out any excess water with your hands. Add the squeezed gelatin to the milk mixture and stir gently until there are no lumps.

Now, we’ll melt the gelatin using a double boiler method. Place the pot or bowl containing the milk mixture over a saucepan of simmering hot water. Stir continuously over low heat until the gelatin is completely dissolved and the mixture is smooth and clear. Once dissolved, remove from the heat.

It’s time to pour the pudding mixture into your chosen serving vessels. I opted for cute cups and small shot glasses for easy individual servings. Having your containers ready beforehand will make this step a breeze.

Cover each container tightly with plastic wrap to prevent a skin from forming. Refrigerate for at least 2 to 3 hours, or until fully set. For a perfect breakfast treat, chilling it overnight works wonderfully!
