Beat the summer heat with this incredibly easy tofu gratin recipe that requires no stove-top cooking! Made entirely in the microwave, it’s a perfect healthy and diet-friendly meal.
Main Ingredients- 1/2 block firm tofu (approx. 150g)
- 10g cabbage (about a small handful)
- 10g mushrooms (about a small handful, shiitake or button recommended)
- 1/4 small onion
Cooking Instructions
Step 1
First, lightly drain the tofu and slice it into 1cm thick pieces or dice it. Wash the cabbage, mushrooms, and onion, pat them dry, and then finely mince or thinly slice them. Chopping the vegetables small helps them cook faster in the microwave and meld better with the tofu.
Step 2
Prepare a microwave-safe bowl or dish. Arrange the sliced tofu in a single layer at the bottom, ensuring pieces don’t overlap too much. You can also mash the tofu, but keeping the pieces intact adds a nice texture.
Step 3
Evenly sprinkle the prepared cabbage over the tofu. The cabbage adds a pleasant crunch and a hint of sweetness.
Step 4
Next, place the mushrooms on top of the cabbage. Mushrooms contribute a rich flavor and a chewy texture. Feel free to use a mix of mushroom varieties.
Step 5
Layer the thinly sliced onion over the mushrooms. The natural sweetness of the onion will complement the other ingredients, enhancing the overall taste.

Now, generously pour 5 tablespoons of your favorite store-bought tomato sauce over all the ingredients. The sauce will help the ingredients cook evenly and remain moist, while also providing the primary flavor base. You can also mix in some ketchup or other sauces if you like.

Finally, sprinkle the cheese evenly over the top. Microwave for approximately 5 minutes, or until the cheese is melted and bubbly, and all the ingredients are heated through. Your delicious tofu gratin is ready to be enjoyed immediately while it’s hot!
